Complicated Things.
Don't you like the simple stuff? I like things that are simple. For instance, I love to cook (even without a kitchen I find a way to cook dinner every night). Better yet, I will go one step further and say I like things that are good and simple. For example, I hate bad food. I think the number one reason why we continue to be overweight is the misconception that good food tastes terrible. If you choose great ingredients to begin with, you will automatically cancel out any opportunity for bad taste to rear its ugly head. If you learn how to cook those ingredients properly, well, then you'll hit a home run. We had out of town visitors over the Christmas Holidays and I remember having a conversation about organic food. He went on about how expensive it was and how I shouldn't not be buying organic food, especially in this economy. While saying all this he is devouring my organic food raving about how good it was. I really wanted to slap him. Anyway, one of my "simple" meals I LOVE to fix myself are grilled meats and vegetables. Sometimes I get sick of fresh vegetables with simple, homemade salad dressings, with a protein thrown on top, so I tend to grill my vegetables to give it that smoky flavor, and yes, I will grill in the middle of winter out on my back deck.

The most simple thing to do it cut up your favorite vegetables sprinkle liberally with PLAIN olive oil NOT extra virgin olive oil,* add some kosher salt and fresh ground black pepper. This tends to taste better the following day too. I make enough for a week and alternate back and forth between fresh, frozen, and fresh-grilled. YUM!
I think you might enjoy it too!My most favorite things to grill are TONS of onions, peppers (any kind really, but mostly bell), asparagus, endive, zucchini, yellow squash and whatever else I'm not too fond of raw. Throw in some chopped garlic, lemon juice, or balsamic vinegar for variety. Grill it just enough to get the smoky flavor, but keep the crispiness. Mmmm, mmmm. Healthy, fresh and simple! *decomposition happens to extra virgin olive in the chemical structure where harmful cancer-causing radicals are released if cooked past it's smoking point and it makes it taste terrible too
